We interviewed Shannon Gable who heads up the wine team over at Ariete in Miami’s Coconut Grove. We got to talking and she was all about this new duck press experience they’ve introduced. They’re one of a handful of restaurants in the US offering anything like it and in part 1 of our discussion, she tells us the story of how came upon this wine that pairs extremely well with the duck press.
